Coco Bolos Wood Fire Grill and Cantina to close in late January

Coco Bolos Wood Fire Grill and Cantina located in the heart of Aggieville has lost its lease and will shut its doors permanently at close of business on Saturday, January 22, 2022.

This restaurant concept has served unexpected flavors from the gulf coast, south Texas and southern New Mexico since its opening in November of 1998.

“Coco Bolos has been a destination for so many in the area and those returning to Manhattan for a visit. It’s been an honor to serve Manhattan and to be a small part of this community. We thank everyone for their support over the years,” said Dave Dreiling, owner of Coco Bolos.

Though the restaurant will close after January 22, patrons will still be able to experience the flavors of Coco Bolos through its catering arm, which will continue to operate out of its offsite catering kitchen in the same manner it has for the past six years. Coco Bolos catering menu will continue to be available and interested parties should visit hcicatering.com for additional information.

Those with unexpired gift cards are encouraged to use them prior to closing, but gift cards will be accepted at HCI Hospitality’s other specialty concepts, Cox Brother’s BBQ, JC’s BBQ and Grill, and Powercat Sports Grill until their expiration.

Coco Bolos employees will be serving up food and music through the last day of operation and are being offered positions at HCI Hospitality’s other restaurant concepts in the area.
